Delicious cookie base with ganache topping.

Ingredients

Cookie Base Ingredients

1 Cup Softened Butter
1 Cup Brown Sugar
1 Cup Granulated Sugar
2 Eggs
2 Teaspoons Vanilla
1 Teaspoon Baking Soda
1 Teaspoon Salt
2 1/4 Cups Flour
2 Cups Chocolate Chips

Ganache Ingredients

4 Ounces Semi-sweet Baking Chocolate
1 1/2 Cups Semi-sweet Chocolate Chips
1 Cup Heavy Whipping Cream

Cookie Pie Directions

  1. Cookie Base:
    1. Heat oven to 350.
    2. Cream butter and sugars
    3. Add eggs one at a time
    4. Add vanilla
    5. Mix well
    6. Combine flour, baking soda and salt
    7. Add to butter mixture until combined.
    8. Grease two 9 in springform pans
    9. Divide dough evenly between both pans and pat down
    10. Bake for about 16 to 20 minutes
    11. Let cool to room temperature
  2. Ganache
    1. Slowly melt cream and chocolate over low heat just until melted
    2. Pour over cookie base
  3. Keep refrigerated until ready to serve
